鹹蛋金瓜 ~ Pumpkin with Salted Eggs

原料

材料 :, 600g 金瓜 ( 切塊狀 ), 3顆 鹹蛋黃( 蒸熟,壓碎備用), 3顆 鹹蛋白, 20片 咖哩葉, 4條 小辣椒, 麵粉適量, 2大匙 奶油, 4粒 小蔥頭 ( 剁碎 ), , 調味料 :, 鹽和糖適量

步驟

1把金瓜沾上蛋白後,放入麵粉裡滾一滾。

2鍋裡燒熱油,放入金瓜炸至金黃色,撈起備用。

3熱鍋,加入奶油,小蔥頭碎,鹹蛋黃碎,咖哩葉和小辣椒爆炒至起泡泡,加入炸好的金瓜一起炒。

4加入鹽和糖稍微翻炒即可上桌。

鹹蛋金瓜 ~ Pumpkin with Salted Eggs

材料:

金瓜 400g (去皮,切片)

鹹蛋黃 3 粒 (煮熟)

鹹蛋白 半湯匙 (煮熟,壓碎)

蒜茸 1 湯匙

辣椒 2 條(切粒)

咖喱葉 2 支

牛油 4 湯匙

麵糊 (混合均勻):

普通麵粉 100g

發粉 1 茶匙

鹽 半茶匙

胡椒粉 適量

水 約 150 ml

油 4 湯匙

做法:

1. 金瓜切好,蒸至剛熟而不太爛。

2. 把麵糊材料全部攪拌均勻成光滑麵糊。

3. 鍋中熱油,把金瓜沾上面糊,炸至金黃色,取出瀝干油分。

4. 把牛油放入鍋中煮溶, 加入熟鹹蛋黃壓成茸,加入蛋白、蒜茸、辣椒和咖喱葉炒勻。

5. 最後加入香脆金瓜片快速炒勻即可。

English Version:

Pumpkin with Salted Egg Yolk

Ingredients:

400g pumpkin - peeled, cut into pieces

3 cooked salted egg yolk

half tbsp mashed cooked egg white

1 tbsp chopped garlic

2 dried chillies, cut into small pieces

2 stalks of curry leaves

4 tbsp butter

Batter:

100g plain flour

1 tsp baking powder

half tsp salt

white pepper -some

around 150ml water

Methods:

1. Steam the pumpkin pieces until just cooked and not too soft, leave to cool.

2. Mix the batter ingredients into a smooth batter.

3. Heat plenty oil in pan, dip pumpkin pieces in batter,deep fry until golden. Remove and drain well.

4. Heat the butter in frying pan, add cooked salted egg yolk and press while stirring, add in egg white,garlic, dried chillies, and curry leaves, mix well.

5. Add in the golden pumpkin, mix well and serve hot!
