Donphan has high Max CP and good stats, a wide specter of movesets which makes this elephant-like Pokémon quite useful in the current meta. He is good in Gym Defense, but has even better usage as attacker. Of course, his role is heavily dependant on his moveset. Donphan has access to Counter, the best Fighting move in the game right now, which is great for taking care of Blissey and Snorlax and packs a mean Earthquake as a charge move.

Another option to use against psychic pokemon is Houndoom the evolved form of Houndour. Houndoom is one of the rare Fire Pokemon who can be used in two different ways. A Houndoom with a Fire Fang/Fire Blast combo can dish out plenty of damage to Grass and Ice Pokemon. But Houndoom is the second most powerful Dark type in the game, which gives it a strong advantage over Ghost and Psychic type Pokemon. This means that a Houndoom with Snarl/Foul Play can easily wreck any Espeon or Alakazam that crosses its path.

Espeon has one of the best Attack stats in the game, third only to Alakazam and Dragonite. It's also one of four Pokemon in the game that can learn Future Sight, which is the second strongest charge move in Pokemon Go. Espeon's only downside is a low stamina stat, so it shouldn't be impossible to beat it if you encounter it in a local gym.
